Cà rốt, khoai lang gọt vỏ, cắt thanh dài, ớt chuông cắt tương tự như cà rốt, đậu que tước bỏ xơ. Sau đó, luộc sơ tất cả với nước sôi khoảng 5 phút. Dùng nước đó, chần sơ qua với hẹ.
Đậu hũ chiên cắt ngang bề dày thành 4 miếng hình chữ nhật, rửa sạch, để ráo. Khi cuốn, đậu hũ sẽ không bị vỡ nát mà còn tạo ra được độ dai.
Pha nước sốt: Cho 100ml nước dừa, 1/2 muỗng cà phê tiêu, 1 muỗng canh đường trắng, 1 muỗng cà phê muối, 1 muỗng cà phê dầu điều, 1 muỗng cà phê hạt nêm, 2 muỗng canh nước tương vào 1 cái tô, khuấy đều.
Cho miếng đậu hũ chiên ra thớt, đặt cà rốt, khoai lang, ớt chuông, đậu que vào, cuốn tròn lại. Dùng hẹ cột để cố định không cho miếng đậu hũ bung ra.
Nấu sôi hỗn hợp nước sốt đã pha ở bước 1 với 2 muỗng canh dầu ăn, cho đậu hũ cuộn rau củ vào, nấu nhỏ lửa khoảng 10 phút.
Khi món ăn chín hoàn toàn thì tắt bếp. Bày ra đĩa, trang trí thêm ngò rí nếu thích và thưởng thức cùng với cơm nhé!
