Dạ dày (bao tử) heo chiên mắc mật với dạ dày heo xử lý luộc với nhiều gia vị tạo hương như hoa hồi, thanh quế, lá mắc mật giúp chín thơm mà không bị hôi. Sau cùng được tẩm ướp gia vị thơm phức, chiên cùng lá mắc mật trông sáng bóng, ngon miệng.
Dạ dày (bao tử) heo làm sạch (dùng giấm hoặc rượu để rửa sạch phần bên trong dạ dày hay cách nhanh nhất bạn cho dạ dày lên chảo nóng khô rồi đảo dạ dày khoảng 2-3 phút, sau đó cho dạ dày ra chậu thêm giấm, muối rửa sạch hết nhớt). Lá mắc mật rửa sạch, chia làm đôi, một phần cắt nhỏ để nhồi vào bên trong phần dạ dày. Phần còn lại để chiên giòn.

Thái mỏng dạ dày thành miếng vừa ăn. Cho dạ dày vào âu, ướp dạ dày với 1/2 muỗng cà phê hạt nêm, 1/2 muỗng cà phe tiêu, 1 muỗng canh dầu hào và ngũ vị hương sau đó đảo đều để dạ dày ngấm gia vị.
Đặt chảo lên bếp thêm 3 muỗng canh dầu ăn rồi cho dạ dày vào chiên với lửa lớn. Khi thấy dạ dày chín tới cho lá mắc mật vào đảo đều lên rồi tắt bếp.
Cho dạ dày chiên lá mắc mật ra đĩa dùng nóng với cơm rất ngon. Có thể chấm thêm nước mắm chua cay nếu thích ăn mặn nhé! Hoặc chấm tương ớt đều tuyệt.
